About Peruvian cacao
Peru is one of the world’s most respected origins for cacao. The growing conditions — altitude, rich soil, and a climate that produces a slow, careful fermentation of the cacao pod — result in beans with a deep, complex flavour profile and a well-balanced mineral composition. Theobroma cacao — the botanical name translates literally as “food of the gods” — is native to the tropical regions of South America, and Peru has been growing and consuming it for thousands of years. Our cacao is sourced specifically from Peruvian certified organic farms, and the beans are processed into powder through a carefully controlled production process that preserves the quality and character of the bean.

What is the difference between cacao powder and cocoa powder?
Both cacao and cocoa powder come from the same plant — Theobroma cacao. The difference is in how the beans are processed. Cacao powder is produced at lower processing temperatures, which preserves more of the natural compounds found in the bean. Conventional cocoa powder is typically processed at higher temperatures and is often alkalised (Dutch-processed), which changes its flavour and colour. Our organic cacao powder is not alkalised — it retains the natural acidity and depth of flavour of the Peruvian bean. In practical terms, cacao powder has a more intense, slightly bitter flavour compared to the milder, often sweeter taste of standard cocoa powder.

Is cacao powder the same as raw cacao?
Not always. “Raw cacao” implies minimal heat processing. Our cacao powder goes through a controlled production process including fermentation and gentle processing — it is not raw in the strictest sense, but it is also not alkalised or heavily processed like many conventional cocoa powders. It sits in the middle: processed enough to be a clean, stable powder, but without the alkalisation or high-temperature treatment that strips cocoa of its natural character.
Can I use cacao powder to make hot chocolate?
Yes — it makes an excellent hot chocolate. Whisk one to two heaped teaspoons into hot milk (dairy or plant-based) and sweeten to taste. Because it is unsweetened and not alkalised, the flavour is intense and slightly bitter — more like drinking chocolate than a sweetened hot cocoa mix. A small amount of honey or maple syrup rounds it out well.
Is cacao powder good for you?
