Our cacao nibs are from the Criollo bean, only 5% of the world's cacao is the Criollo tree. The Criollo bean tree is notoriously difficult to cultivate and is susceptible to environmental changes; the Criollo tree is native to South America.
The Criollo Bean is light pink in colour and has an elegant, delicate flavour rather than the bold, intense chocolate explosion of the Forestero and Trinitario bean.
The refined flavour profile of the Criollo bean has earned it the name 'Prince of Cocoas' - it has become a highly prized commodity and used by the most prestigious chocolatiers around the world.
Due to these cacao nibs being made from the superior quality Criollo Amazonico bean, it is possible to implement a low fermentation process, also cleaning and drying has taken place at low temperatures, this ensures our cacao nibs retain their natural nutrients and delicate chocolate flavour.

Cacao is a rich source of epicatechin - a natural plant phenol that belongs to the flavan-3-ols group, this group is also referred to simply as flavanols.

Yacon has the scientific name Smallanthus sonchifolius and is indigenous to South America; the plant produces large tuberous roots which have traditionally been used to sweeten dishes, as well as being a vegetable eaten for sustenance.
Mainly composed of fructooligosaccharides and water, the vast majority of the sugar and carbohydrates yacon contains can't be easily absorbed by the body, preventing sugar being absorbed into the bloodstream results in a low-calorie intake.
